Let’s clear up a few things about this cucumber salad. First of all, it’s Gaby’s Mom’s recipe, but we’re calling it Gaby’s for short.
Second, it’s the most delicious cucumber salad I’ve ever met. Somehow, crisp cucumber, creamy avocado and a super basic balsamic dressing create a stellar cucumber salad.
This recipe comes from Gaby Dalkin’s new cookbook, What’s Gaby Cooking: Everyday California Recipes. Perhaps you know Gaby’s blog, which has the same name. I’m always admiring Gaby’s simple, colorful, fresh-from-the-farmers’-market recipes.
The Best Cucumber Salad Recipe
Here’s what Gaby says about this salad: “My mom made this salad just about every night when I was growing up. It was so yummy that I’d eat half the bowl before we even sat down for dinner, even though I’d get yelled at for not saving any for my dad and sister… Now it’s my go-to side salad, and my husband eats half of it before we sit down for dinner.”
Here’s what I have to say about this salad: I’ve demolished this cucumber salad all on my own in one sitting. I want to plant Persian cucumbers in my garden so I can eat cucumber salad all summer long. I’d grow an avocado tree if I could—well, I’d grow an avocado tree for many reasons. Anyway, it’s that good.
Watch How to Make Gaby’s Cucumber Salad
Cucumber Salad Tips
- I found Persian cucumbers at Trader Joe’s. They’re smaller in diameter, extra-crisp, and less seedy and watery than regular old cucumbers. If you can’t find them, opt for English cucumbers, which are similar in texture.
- Don’t overdo the garlic in this recipe, or it will overwhelm the other flavors (speaking from experience here). Two small-to-medium cloves or one large clove will be just right.
- No need to bust out your thick, expensive balsamic vinegar for this recipe. Regular balsamic will do great.
- This recipe is best served immediately, since the avocado browns over time. However, if you toss it well, you can refrigerate leftovers for a few hours.
- Gaby suggested tossing in arugula and cherry tomatoes, if you want this salad to go further. I added a chopped radish mostly for color, honestly, but it’s also nice and springy.
I got so excited about this salad that I made a couple more of her simple side dishes from her book the other night, her charred sugar snap peas and Omi’s haricots verts salad. They were both so easy and so tasty.
I’m dying to make her Cobb salads for all seasons, poblano scallion queso and green rice burrito bowl. The book isn’t vegetarian, but I found lots of recipes to make in there.
If you’re looking for fresh recipes to make on the grill this summer and appealing fresh comfort food, I think you’ll really enjoy What’s Gaby Cooking.

Can’t wait to try this. I love cucumbers and I love Gaby’s recipes, they are easy and always delicious.
Kate
I know right! Gaby is great. :) It’s really good!
Jon
My mom gave me some cucumbers from her garden so I went looking for ideas last night and came across this recipe. It turned out AMAZING! Since the cukes were standard ones and humungus I used only one. I spiralized it with my KitchenAid spiralizer and sweated it with a little salt for about an hour. Also to make a light but full meal, i doubled the sauce to marinate and bake some tofu sticks and I threw in a little extra Italian seasoning. I did add the cherry tomatoes and radish but left out the arugula. Thank you for sharing, this is a great recipe!!
Susan
Thanks for sharing theses adaptations… will incorporate the tofu and sweating standard clues; since we will soon have slit of them!!!

YES, Persian cucumbers are my favorite to use in a salad! Love how fresh this salad looks! For some reason, I am unable to see the nutritional breakdown of the recipe when I click on the arrow/ Not sure if something’s wrong with my computer or what! :(
Kate
Hi Cassie! I’m sorry. I have been having some issues with it. But, it should be working now!
Gaby Dalkin
OMG love it and love you for sharing :)
Kate
You’re very welcome! The salad is wonderful, and your book. :)
Gaby Dalkin
Thank you! SO glad you like it :)
Elizabeth
Ok, this is delicious and so so easy to make. I used standard cucumbers from my garden as that’s what I have an abundance of right now. I did use the specialty balsamic that I love that is manufactured by Veronica Foods and sold by lots of independent oil and vinegar stores. I cut down oil to two Tbsp and vinegar kept at 2 Tbsp. Good shake of salt and grind of pepper. Two yummy cloves of German red garlic, avocado, fresh sungold tomatoes from my garden, and a small handful of arugula. It’s divine, delicious, and a new easy favorite.
Natalie Ellis
My mouth is watering now It looks really fresh and green. I’ve never tried Persian cucumbers but it looks like they are polular around. Aw, I have to try these soon!!
Kate
It’s so good! Let me know what you think.

This salad just screams FRESH, but I have to admit…I love your photos just to see what vintage utensil you are using.
Kate
Thank you! Fun fact, most of the vintage silverware came from my grandmother and great-grandparents. :)
Madeline
Lady Hamilton silverplate. Love that pattern.
Liv
Oh yum! I love vinegar-y cucumber salads and I’ve been on a balsamic kick lately. Will definitely be making this
Kate
Great!

YUM! This sounds fresh and crisp and deliciously luxurious at the same time (thanks, avocado!)

Can’t wait to hear how you like it!
Sharon
Amazing. I did dice up some white onion and grape tomatoes. Nice addition to an already perfect salad.
Heather
Wow, I never thought to combine cucumbers and avocado. This also caught my eye because I happened to have all the ingredients and an avocado that needed to be used before it got too ripe. I also included the radishes and halved grape tomatoes. Voila, a terrific cucumber recipe. Trader Joe’s is midtown in my city so I picked up an English cucumber from Whole Foods downtown since they didn’t look like they had Persian cucumbers. Thanks as usual!!!
Gaby Dalkin
You can never go wrong with adding avocados!!
Kate
I’m happy to provide a great recipe from another food blogger! :)
OH LA LATKES
Love this recipe because it sounds A. very simple and B. extra delicious. Creamy avocado with “crunchy” cucumber must be totally great together. Also, I like the idea of adding a pop of pink colour in the form of chopped radishes. Going to try this salad.
Kate
Let me know what you think!
Nina
Thanks for sharing! Planning to make it, soon. Sounds delicious.
Kate
Let me know what you think, Nina!
Liz
This is so simple and delicious! I had radishes hanging around so I added those and it’s the best combo of texture and flavors. Thanks for sharing!
Kate
You’re welcome, Liz!
Carol Ann Liner
I love the Cucumber Salad. I put radishes on mine. I’m thinking next time I make it (which will probably be in the next few days, that’s how good it is), I may put the Quick Pickled Onions in for the sweet. I like those too! Keep it up.
Kate
All great add-ins!
Grace
Yum! How can something so good be so easy?? my refrigerator is in a sorry state right now so this bit of inspiration came during desperate times, haha. Cherry tomatoes would go so well, but sadly didn’t have any, so my add-ins became Siracha and cilantro.
Kate
Thanks for trying it, Grace!
Tracy
I just made this as written to go along with some roasted asparagus for dinner. Delicious! Thank you!
Kate
You’re welcome! I’m glad it worked out.
Deb Hallett
I can see why this recipe is good but I found there was just a bit too much vinegar and next time I would use white balsamic as the color was off putting to my eye
Kate
Vinegar can be one of those ingredients that some like more thank others! Sounds like a great way to make it more to your liking, Deb. Thanks for sharing!
Lori P
This was sooooo good and fresh for a healthy weeknight meal. I served it over cooked quinoa and added chopped arugula as you suggested. Even my hubby gobbled up two helpings. Thanks for a great salad recipe!
Kate
Win! Thank you, Lori for sharing. I’m glad to hear your husband gobbled it up. :)
Jaimee
oh my goodness. this salad is SO addictive! I made a 4 person serving and my husband and I ate the whole thing up. We added some arugula and radishes to make it more of a dinner salad with a side of protein.
Kate
Great combination!
Nicole Andresen
Made this last week for the family and it was a huge hit! Very delicious!
Kate
Wonderful! Thank you, Nicole. I appreciate the review.

This looks amazing!! I have just been introduced to your site because of your amazing thai pineapple fried rice recipe and I am excited to make all of your food!!
Will leftovers of this cucumber salad hold up well? Or is it kind of a one and done type dish?
Kate
It should hold up nicely! That fried rice is delicious. Thanks so much for your comment, Bri!

Kate
Great! You’re welcome, Christy.
Libby
I made this one for the first time 12 days ago and have since made it 4 more times. So simple and tasty!
Kate
That’s awesome! Thanks for sharing, Libby.
Donna
What vinegar would you substitute for the balsamic? For some reason balsamic doesn’t agree with me ? Thanks: )
Kate
You can use red wine vinegar. It will change the flavor slightly. But can be a good substitute.
Emily
This dish was so tasty! I added radishes, arugula and cherry tomatoes to make it a little more hearty. Served alongside some vegan carrot dogs! Thanks for another winner!
Kate
Sounds like a delicious combination, Emily! Thanks so much.

Just made this after finding your website a few hours ago looking up seasonal produce. Went down a rabbit hole on your site and pinned about 80 things Then I found this amazing salad and it needed to be tried. So happy I did because I’m currently sitting on the couch with this on my belly enjoying every bite! Also, great name
Kate
I’m so glad you went down a rabbit hole. :) Let me know what you think as you start to try them, Kate!
Caitlin
LOVE this salad! Super easy to make and always a hit at dinner! Very easy to customize. I tend to add mozzarella balls and cherry tomatoes along with the cucumbers and avocado. My husband and I usually race to grab the leftovers (if there are any) after dinner to see who the lucky winner is to bring the rest to work the next day. Definitely would recommend.
Kate
Thanks for sharing, Caitlin! I appreciate the review.
Bel
Amaaaaazing! I couldn’t stop myself from eating the whole lot. From now on I am going to double this recipe because I couldn’t stop going back for a little more until it was all gone. This will be a permanent side from now on in my house. Thanks Kate, and thanks Gabby x

Loved this recipe. I did add a bit of olive tapenade with the olive oil for the dressing, as it was on hand and I love it. Turned out great! So quick and easy.
Kate
Thank you for your review, T. Jones!
Cee
I love your recipes! I’ve noticed that some brands of olive oils have a weird smell to it, whats your favorite brand to use?
Kate
Some can have a distinct taste! I vary in what brands I do buy, however. This is a great one!
Cee
Which one is it? I’m not sure if I’m missing something that you may have posted but I don’t see anything.
Tate
I loved the flavors of the salad. But that amalgamation of ingredients ended up looking less than desirable. Balsamic is absorbed by the cucumbers and the avacado breaks down into some of the sauce. Whole thing turns brownish green. Might try using red wine next time.
Kate
I’m sorry you didn’t have the best experience, but I’m glad you still enjoyed the flavors together Tate.
Claire
File this under “looks weird, tastes delicious.” Since it’s SO easy to throw together, it gets a pass.
Kate
That’s funny! But, I’m glad you liked it. Thanks for your feedback, Claire.
Marilou B.
This is a very simple and delicious salad! I adjusted it to my taste by reducing garlic to 1 clove and adding a thinly sliced green onion and halved cherry tomatoes. I also tossed the diced avocado in lemon juice to prevent it from browning. Thanks for the recipe!
Marilou B.
Oh and I used white balsamic vinegar, it really helps with the look!
Rose
Hi Marilou, I wanted to say thanks for the suggestion of using white balsamic for this salad. I wouldn’t have thought of it on my own, but I used it in making the salad this afternoon and it was refreshingly delicious!
Kate
Thank you for sharing your variation, Marliou!
Lara
This was just what I was looking for tonight, a light, crisp, tasty salad that was quick to prepare. The only thing I didn’t have was the avocado (I know, crucial), but it was still tasty and fresh, and just what I wanted. And now, I have the full version still to look forward to . Thanks for posting.
Kate
You’re welcome, Lara! I’m happy you still liked it without avocado.
Lara
Trying the full version with avocado tonight!
Penelope Byrd
This recipe is amazing! I was so very proud that my adult kids loved and bragged on me…..This 63 year old mama and grandmama has never been able to cook, EVER!…My head is as big as a football stadium… I became a star and out did their dad! Thank you!
Kate
That’s great! Thanks for sharing.
Valerie
Made this tonight. Simple and delicious! I added the tomatoes to give it a pop of color. My mom, who isn’t a fan of cucumber ate seconds. Definitely adding it to the summer rotation.
Kate
Wonderful to hear, Valerie!

LOVED this salad. So easy (really, so so easy) and can be made with all pantry staples. I thought the picture included red onion (it was radish) but I added the onion anyway and it paired great. Next time I’ll add in tomato and chickpeas to keep building onto the recipe. loved it, thanks Kate!
Kate
I’m glad you loved it, Kristy!
L Rasmussen
I added radish to the salad and it was delish!
Kate

I made this for a camping trip. Very good. Left out the avocado as I didn’t want it to spoil. But will add it next time. Thanks for sharing.
Kate
You’re welcome, Lynn!
Christina Luglan
I made this and loved it except I found I was searching for avocado so I just added a 2nd one along with all the cherry tomatoes I had from my u-pick at the CSA. Delicious!
Kate
Thanks for sharing, Christina!
Linda Trotier
Made as a side for dinner tonight! Oh so delicious and super easy! Will be making this on a regular basis. Thanks Kate and Gaby!
Allison
I’m obsessed with this, it gets made in my house at least once a month. We aren’t big on radishes, so we stick to cucumber, cherry tomatoes and avocado and it’s incredible. So easy (and cheap!) to make!
Kate
It’s so good! Thanks for sharing, Allison.
Sophia
Such an easy recipe! I cut it in half since I cook for one so I use two cucumbers, a radish, some cherry tomatoes and it’s perfect!
Pearl
Great!
lala
Just made this salad with radish, long green pepper, avocado and cucumber. I added a little senape mustard to my dressing which made it a little creamy. Delicious!
annisa
OMG this was so simple but crazy tasty. I think I might eat this every single day. Thank you so much for share ❤️
Ivy
I love it!!! So yummy.. thnk you
Andee
I don’t know how I’ve lived my life up until now without eating this everyday!!! By far one of my FAVORITE recipes ever! Thank you!
Kelly
In my garden this year, I grew pickling cucumbers. Do you think they will be okay to make this salad with?
Kate
Hey Kelly! If you like the taste of the cucumbers sliced, sure, they’ll be great!
Nicole
This salad was gone in three seconds flat! Added cherry tomato and onion to it- was thinking of throwing in feta, but glad I didn’t, since avocado really shines as the “soft and creamy” star of the show. Bonus is not needing to peel the cucumbers!
Tera
I make a version of this with diced onion , cucummbers, red peppers and celery with the dressing and let marinate. keeps for several days in fridge. Then add greens and avocago and cherry tomatoes before serving with sea salt with added sea vegetables. Delicious!
Elena
Really great, Kate!
This is my pregnancy go-to salad! I add some chopped oregano and mint for a little extra flavour and it’s delightful.
Thanks for the recipe!
Kate
Congratulations, Elena! Thank you for sharing. I’m so happy you love it!
Kelly
This was easy and super delicious on a hot day! Very refreshing. This will be a great way to use all of those garden cucumbers this summer!
NanC
Made this tonight, and it was absolutely delicious! I served it over spring mix and topped it with edamame, sunflower seeds, and pumpkin seeds! Taking leftovers for lunch tomorrow!
Michelle
Has anyone tried using frozen diced avocados to last a few hours in fridge?
Kate
Hi Michelle, this is really best with fresh. Let me know if you try it!
Maddie Hjulstrom
I made this tonight, and added some cherry tomatoes and radishes as suggested, plus a little feta. Delicious, and so refreshing and light!
Estee
Costco has them!!
Andrea
I have a surplus of cucumbers from my garden and happened to have a ripe avocado so I thought I’d give this a try. I used what I had for cucumbers, since I didn’t have either of the kinds listed. I cut some slices into quarters to make them bite sized. The salad was delicious! Even my 13 year old said “That has great flavor!”
Missy
Gaby’s cucumber salad is divine. My husband couldn’t stop talking about it. Says it should be a summer staple. I would rename it cucumber and avacado salad
because the avacado is so key
Kate
I’m glad you both love it! Thank you for sharing.
Joycelyn
Interesting. I make an almost identical salad but use rice vinegar instead of balsamic and add a bit of sesame oil as well as a sprinkle of toasted sesame seeds if I have some on hand.
I’m not a big lover of balsamic vinegar but my dear heart is so will give your version a go just for him. I’m also embarrassed to say I have Gaby Dalkins cookbook but obviously haven’t paid enough attention to the salad recipes. I’m thinking when I see you bringing one of them up, I’d best be doing some more serious reading!
Stay well everyone
Kaylee
This recipe was so good! I added some red onion and cilantro to mine :)
Amber
Loved this recipe so much – I made it with your crispy smashed potatoes. Wonderful summer lunch!
Kate
I’m happy you loved it, Amber! Thank you for sharing.
Susan
This was fine! Next time I will make less dressing and replace some of the balsamic with red wine vinegar. For me, there was just a little too much balsamic and too much dressing overall. Most of it was left in the bottom of the bowl.
Carolynn
In summer I grow “pickling cucumbers” or buy them at the farmer’s market. They are absolutely the best tasting cucumbers you will ever eat. They will be delicious in Gaby’s Cucumber Salad. Thank you!
Carolyn
Well I tried this with regular cucumbers and it was absolutely hideous. And I used a top-of-the-line balsamic vinegar and two avocados and still didn’t help any
Kate
I’m sorry you didn’t love it, Carolyn. Thank you for your feedback.
Devorah
This salad was delicious! My meat-and-potatoes husband ate most of it in one sitting :) I might try it with the suggested arugula next time.
Shannon
I liked it by adding the radishes and avocado. The avocado added a yummy creamy texture to the crunch of the cucumber and radish.
Jennifer
This recipe. So simple and so stunning. Served it with some mushroom walnut burgers on a bed of spring salad greens with a dab of pesto and cherry tomatoes. So delicious. I just love your recipes. So delicious, fresh and the photography is simply beautiful. Thank you so much!
Kate
Thank you, Jennifer! Always happy to share a delicious recipe.
Kateri
Such a yummy recipe! I don’t usually buy cucumbers because I never found a cucumber salad that I particularly enjoyed but I absolutely loved this one! I already made it twice this week and plan to make it a lot more this summer!
dc in nh
This should have the vegetable to oil & vinegar mixture ratio adjusted. More vegetables or other dry additional ingredients added would result in a much more stable product.
Kate
I’m sorry you didn’t love this recipe!
Carolyn
Delicious and super easy recipe. It’s also very versatile—I like it with beans and rice and as a side dish to pasta or pizza.
Kate
Thank you for your review, Carolyn!
Madeline
This was so good! Couldn’t stop eating.

Thanx for all your great ideas. I am going to try and make this for one of the holiday meals. My daughter’s in charge, so it might not fit. But then I can make it for myself. The 5 star rating is based upon my expectations.

Your cookbook is my “go to” for healthy eating…we love your recipes! I want to try the cucumber salad soon….funny that I was just thinking of finding a good, healthy cucumber salad recipe.
I am so happy to hear Cookie is doing well, and will keep her in my prayers.
Happy 4th!

Thank you, Roberta! I’m glad you are loving my cookbook and I really appreciate your kind words for Cookie.

This was so yummy when eaten immediately as I had a few tastes.. It got very watery after resting a few hours in the fridge so it was not as good.
Kate
I’m sorry you didn’t like the result once it sat. I appreciate your feedback.
Maria Paglialungo
Hi Kate. How’s Cookie doing?
Kate
Hi Maria! I just posted an update.

Today (03Jul), I made it to Target and picked up everything that we didn’t have here. It gets put together tomorrow morning for a late lunch. Getting all the extras raised the price a bit, but we are all looking forward to it.
Saskia
Yummy in all its simplicity. I added some tomato. I had it with your ratatouille pasta dish which was also delicious!
Jessica
What if I use Roma tomatoes and what garden herbs should I use?
Kate
Hi! I prefer it as written. If you add tomatoes, be sure to cut them smaller.
Kelly
Yum! This is so fresh and delicious. I love the combination of the crunchy cucumbers and creamy avocado with the zippy dressing. It’s just so good! We have an abundance of cucumbers in our garden right now and this is a perfect new twist on how to use them. Thanks!
Kate
I’m glad you loved it, Kelly!
CJ
This was a delicious and easy to make salad. I followed the recipe exactly, then added grape tomatoes, which added extra flavor and color (and nutrition). Thank you!
Heather
Here in New Zealand Persian cucumbers are called Lebanese. .we have a greenhouse here in Christchurch and this year my husband planted 3 plants. Consequently he is picking at least 5 every day. I am trying all the different salads I can find recipes for. This one will be next
Julie Wolfe
This was easy and yummy.
Kate
Thank you for sharing, Julie!

Made it immediately upon reading the recipe! I added red onion slices and radishes. I will say that it is to be eaten the day you make it as it’s not the best the next day.
Kate
I love hearing that! Thank you for sharing, Karen.
JJ
Made this with white balsamic vinegar which is a pantry staple for me and it was fresh and delicious. Eating this day of making is best. Leftovers day after, while it tasted great, looked pretty dismal and unappetizing!
Kate
Thank you for sharing, JJ!
Pamela
Wow, this was amazing, so refreshing on a hot summer day.
Thank you Kate
Kate
You’re welcome, Pamela!

I’m going to be honest. Nothing annoys me like people who comment as a cheerleader for you and haven’t yet tried the recipe.
I have tried this recipe and it is actually delicious. I love how crisp and crunchy the cukes remain due to no salt. When I cared for my mother who had congestive heart failure I was desperate to find low sodium recipes. thank you for this. so few bloggers post recipes for those on low-sodium diets.
Jean
YUM. Added an extra tablespoon of balsamic. Diced a whole tomato in there. SO DELICIOUS! Thanks Kate!
Kate
I’m glad you loved it, Jean! Thank you for your review.
